Blueberry Weetabix Muffins

These low sugar muffins make a great snack or breakfast using something a little bit different - Weetabix! Yummy for teeny tummies and for big tummies (I spread mine with a bit of butter and apricot jam - totally amazing!)

Makes 9 muffins

  • 175g self raising flour
  • 40g coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 2 plain Weetabix
  • 2 ripe bananas
  • 60ml sunflower oil
  • 1 egg
  • 130ml milk of your choice
  • 90g blueberries (fresh or frozen)

Line a muffin tray and preheat your oven to 190 fan. In a large bowl, add the flour, coconut sugar, baking powder and spices. Break up the Weetabix and add the the dry ingredients. In another bowl, mash the bananas and add in the oil, egg and milk and stir well. Add the wet ingredients to the dry ingredients and beat until combined (I did mine in the Kitchenaid for 1-2 mins). Gently stir through the blueberries being careful not to overmix. Spoon into the cake cases and bake for 20-25 mins until a skewer comes out clean. You can also freeze these muffins!
