Energy Balls

These snacks are full of goodness and are great snack for grown ups and kids. You can also add different nut butters and dried fruits if you fancy. They’re vegan too!

Makes about 16

  • 300g pre chopped dates
  • 60g oats
  • 75g peanut butter
  • 1tbsp unsweetened cocoa powder
  • 40g desiccated coconut
  • Boiling water for soaking

Put the chopped dates in a bowl and cover with boiling water for 10 minutes to soften. Drain the dates, add back to the clean bowl along with the oats, peanut butter and cocoa powder. Mix until fully combined. Shape into balls roughly 16 balls (mine weighed about 25-30g each but you can do this by eye). Roll each ball in the desiccated coconut so it’s evenly coated. Chill for 30 minutes before eating! Yum!
