Oaty Berry Muffins
These are great to keep in the freezer and defrost in the morning for a snack! These ingredients makes 12 muffins!
- 200g plain flour
- 2tsp baking powder
- 100g oats plus extra for topping
- 230g natural yogurt
- 1 egg
- 1 tbsp vanilla extract
- 90g coconut sugar
- 80ml vegetable oil
- 125g berries (I used redcurrants and blueberries)
Mix the oats, yogurt, egg, sugar, oil and vanilla together (I did this in a kitchen aid). Add to the wet mix the flour and baking powder and mix again until just combined. Stir through most of the berries but leave some for topping. Add to paper cases in muffin tin, dot on a few berries on each muffin and sprinkle on some more oats. Bake at 180 degrees for around 20 mins.
